Things you need

  • Bamboo Mat

  • Coconut milk
  • 2 steamed lemongrass stalks
  • 2 teaspoons sugar
  • Rinsed 300 grams wide rice noodles
  • 3 teaspoons kosher salt
  • 1/3 cup fresh cilantro leaves
  • 170 grams mung bean sprouts,
  • 1/3 cup fresh mint leaves
  • Chili paste

How to prepare

  • Grind peppercorns, coriander, turmeric, fennel, cumin, chilies, and cloves together
  • Mash the inner layer of the lemon grass
  • Add chicken, grinded paste, and shrimp paste in medium heat. Do not forget to stir continuously
  • After 2 minutes, add broth, salt, coconut milk, and sugar
  • Then add lemongrass and cinnamon. Cover and boil it for about 20 minutes
  • Separately boil the bean sprouts
  • Add noodles with the sprouts and cook until firm

Things you need

For Dough

  • 3⁄4cup hot water
  • 250 grams cups flour

For the filling

  • 250g ground chicken
  • 1 teaspoon oyster sauce
  • 1 tablespoon oil
  • 4 drops sesame oil
  • 2 tablespoons chopped spring onions
  • 1 chopped onion
  • Salt
  • Pepper

For the coriander salsa

  • 2 ripe tomatoes
  • 1 chopped red chili pepper
  • 1⁄2 teaspoon cumin powder
  • Salt
  • 4 chopped garlic cloves
  • 2 teaspoons lime juice
  • 2  tablespoons chopped coriander leaves

How to prepare

  • With hot water make stiff dough and keep aside for an hour
  • Sautee ground chicken, oyster sauce, spring onions, onion, sesame oil in the oil
  • Sprinkle salt and pepper

  • Then boil and peel the tomatoes for making coriander salsa
  • Mix red chili, coriander leaves, garlic and cumin powder
  • Then add salt and lemon juice

Assembling the dim sum

  • Divide the dough and roll into thin circles
  • Place the filling of chicken right at the center
  • Then use your hands to shape the dim sum
  • Steam for 15 minutes
  • Serve with coriander paste.

4. Satay, Indonesia

Things you need

  • 1/2 cup coconut milk      
  • 1 clove garlic, minced      
  • 1 tablespoon curry powder      
  • 1/2 teaspoon salt      
  • 1 1/2 teaspoons brown sugar      
  • 1 teaspoon soy sauce      
  • 3/4 pound skinless, boneless chicken breast
  • 1 cup coconut milk      
  • 1/2 teaspoon ground black pepper       
  • 10 (6 inch) wooden skewers, soaked in water for 30 minutes      
  • 1/4 cup brown sugar      
  • 1/2 cup creamy peanut butter      
  • 2 tablespoons lime or lemon juice      
  • 3/4 cup chicken stock      
  • Salt

How to prepare

  • Stir coconut milk, curry powder, brown sugar, garlic, pepper, and salt until the sugar gets completely dissolved
  • Marinate the chicken with the mixture and leave for 2 hours
  • Simmer coconut milk, peanut butter, chicken stock, curry powder, and brown sugar at medium heat for 5 minutes
  • Remove the thick mixture, then sprinkle soy sauce and lemon juice for taste
  • Grill the marinated chicken for 5 minutes on each side
  • Now, serve with the thick mixture.

5. Red Bean Soup, Korea

Things you need

  • 1 cup dried azuki beans
  • 1 cup boiling water
  • 3 cups rice flour
  • Salt
  • Sugar
  • Water

How to prepare

  • Boil the beans till they are soft
  • Mash them properly
  • Make rice cake balls with the flour
  • Put the beans inside the rice cake balls and boil
  • Boil water with some mashed beans, sugar, and salt
  • Put the balls inside

6. Green Tea Ice Cream, Japan

Things you need

  • 240ml heavy cold cream
  • 80g sweetened condensed milk
  • 12g teaspoons green tea powder

How to prepare

  • Mix green tea powder in hot water
  • Set aside for cooling
  • Whip heavy cream still its stiff
  • Mix green tea with condensed milk
  • Add heavy cream the mixture
  • Mix everything by folding the layers
  • Transfer to a container
  • Freeze for more than 6 hours.

7. Osmanthus Cake, China

Things you need

  • 90g of Rock Sugar
  • 1 Tablespoon of Sweet Osmanthus
  • 300ml of Water
  • 1 Tablespoon + 1 Teaspoon of Gelatin

How to prepare

  • Boil the rock sugar in water until completely melted
  • Put the Osmanthus and stir properly
  • Add gelatin and keep stirring
  • Let everything gets dissolved completely
  • Transfer to cookie mould
  • Refrigerate for 2 hours till the jelly is set.
